- What does the triangle yellow warning sign means inf front of a server in the server list ?

Is there some program to look before you connect if servers are running cheating death ?

The yellow triangle means its a non-secure server. Meaning, NO VAC.

And what does the pinguin means ?

Its in the filters that are in the gamelist within CS, click on filters "uses anti-cheat technology" but sometimes CD slips through a couple of times.

the penguin means that the server is linux-based

And what does the pinguin means ? Get The All-Seeing Eye (http://www.udpsoft.com/eye/) it has VAC & C-D filter :)
The only way you can spot a cheating death server is by looking at it's name it would probably have something like [CD Req] and the end of the name... but not sure... go with ASE
